Ingredients

  • 2 lbs Yukon Gold potatoes peeled and sliced
  • 6 slices Bacon diced
  • 1 cup Onion chopped
  • ¼ cup Apple cider vinegar
  • ¼ cup Water
  • 3 tablespoon Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Fresh parsley chopped

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside.
  2. 2. In a skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  3. 3. Add the chopped onion to the skillet and cook until softened.
  4. 4. Stir in the vinegar, water, sugar, mustard, salt, and pepper. Bring to a boil.
  5. 5. Pour the hot dressing over the potatoes and gently toss to coat. Add the bacon and parsley, and mix well.
  6. 6. Serve warm or at room temperature.
