Ingredients

  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • 1 cup flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg beaten
  • ¼ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the mashed bananas, sugar, egg, and vanilla extract. Mix well.
  3. Add the oats, flour, baking powder, baking soda, and salt. Stir until just combined.
  4. Stir in the milk and vegetable oil until the batter is smooth.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
