Ingredients 

Main Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion finely chopped
  • 1 unit Lime juiced
  • 2 tablespoon Olive Oil
  • ¼ cup Cilantro chopped
  • to taste Salt and Pepper

Instructions 

  1. In a large mixing bowl, combine black beans, corn, cherry tomatoes, and red onion.
  2. In a small bowl, whisk together lime juice and olive oil. Pour over the salad and toss to coat.
  3. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
