Ingredients 

Filling

  • 4 cups blackberries fresh or frozen
  • 1 cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice freshly squeezed

Crust

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold, cut into cubes
  • ¼ cup ice water
  • 1 tablespoon sugar for sprinkling on top

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine blackberries, sugar, cornstarch, and lemon juice. Set aside.
  3. In another bowl, mix flour and cold butter until it resembles coarse crumbs. Gradually add ice water until the dough comes together.
  4. Divide the dough in half. Roll out one half and fit it into a pie dish. Pour the blackberry mixture into the crust.
  5. Roll out the second half of the dough and place it over the filling. Crimp the edges to seal and cut a few slits on top to allow steam to escape.
  6. Sprinkle sugar on top of the crust.
  7. Bake for 45 minutes or until the crust is golden brown and the filling is bubbly.
  8. Let the pie cool before serving.
