Main Ingredients
- 2 lbs Beef shank cut into chunks
- 1 Onion quartered
- 2 cloves Garlic minced
- 4 cups Beef broth
- 2 Carrots cut into chunks
- 2 Zucchini cut into chunks
- 2 Corn on the cob cut into pieces
- 1 Cabbage cut into wedges
- to taste Salt
- to taste Pepper
- 1 bunch Cilantro chopped, for garnish
- 2 Limes cut into wedges, for serving
1. In a large pot, add the beef shank, onion, garlic, and beef broth. Bring to a boil.
2. Reduce heat and simmer for about 1.5 hours, or until the meat is tender.
3. Add the carrots, zucchini, corn, and cabbage. Continue to simmer for another 30 minutes, or until the vegetables are tender.
4. Season with salt and pepper to taste.
5. Serve hot, garnished with chopped cilantro and lime wedges on the side.
