Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 Green bell pepper, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Paprika
  • 4 cups Chicken broth
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 cup Corn kernels
  • 2 cups Cooked chicken, shredded
  • 1 Lime, juiced
  • Salt and pepper to taste
  • Tortilla chips, for serving
  • Avocado, diced, for serving
  • Cilantro, chopped, for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, red bell pepper, and green bell pepper. Cook until softened, about 5 minutes.
  2. Add cumin, chili powder, and paprika. Stir to combine and cook for another minute.
  3. Pour in chicken broth, diced tomatoes, black beans, and corn. Bring to a simmer.
  4. Add shredded chicken and lime juice. Season with salt and pepper to taste. Simmer for 10-15 minutes.
  5. Serve hot, topped with tortilla chips, diced avocado, and chopped cilantro.
