Main Ingredients
- 2 tablespoon butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 500 g mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- to taste salt and pepper
1. Melt butter in a large pot over medium heat.
2. Add chopped onion and minced garlic, cook until softened.
3. Add sliced mushrooms and cook until they release their moisture and become tender.
4. Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes.
5. Use a blender to puree the soup until smooth.
6. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Heat through but do not boil.
7. Serve hot and enjoy!
