Ingredients 

Main Ingredients

  • 4 cups chicken broth
  • 2 large eggs beaten
  • 1 tablespoon cornstarch mixed with 2 tablespoon water
  • 1 teaspoon soy sauce
  • to taste salt
  • to taste white pepper
  • 2 slices ginger optional
  • 2 scallions green onions chopped, for garnish

Instructions 

  1. 1. Bring the chicken broth to a boil in a pot.
  2. 2. Add the ginger slices if using.
  3. 3. Stir in the cornstarch mixture and soy sauce.
  4. 4. Slowly pour in the beaten eggs while stirring the soup in a circular motion.
  5. 5. Season with salt and white pepper to taste.
  6. 6. Remove the ginger slices before serving.
  7. 7. Garnish with chopped green onions and serve hot.
