Instructions
1. Bring the chicken broth to a boil in a pot.
2. Add the ginger slices if using.
3. Stir in the cornstarch mixture and soy sauce.
4. Slowly pour in the beaten eggs while stirring the soup in a circular motion.
5. Season with salt and white pepper to taste.
6. Remove the ginger slices before serving.
7. Garnish with chopped green onions and serve hot.
