Egusi Soup Recipe

- 2 cups Egusi (melon seeds) ground
- 1 cup Palm oil
- 2 cups Spinach chopped
- 1 lb Beef cut into chunks
- 1 Onion chopped
- 2 cups Stock beef or chicken
- 2 tablespoon Crayfish ground
- 2 Habanero peppers chopped
- to taste Salt
1. Blend the egusi seeds until smooth.
2. Heat palm oil in a large pot over medium heat.
3. Add chopped onions and sauté until translucent.
4. Add the ground egusi and stir continuously for about 10 minutes.
5. Add the beef chunks and cook until browned.
6. Pour in the stock, crayfish, and habanero peppers. Stir well.
7. Reduce heat and simmer for 20 minutes.
8. Add the chopped spinach and cook for another 5 minutes.
9. Season with salt to taste and serve hot.
