Ingredients

  • 4 large onions thinly sliced
  • 4 tablespoons butter
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ cup dry white wine
  • 6 cups beef broth
  • 1 teaspoon fresh thyme chopped
  • 4 slices baguette toasted
  • 1 cup grated Gruyère cheese

Instructions 

  1. 1. Melt the butter in a large pot over medium heat. Add the onions, sugar, and salt. Cook, stirring occasionally, until the onions are deep golden brown and caramelized, about 30-40 minutes.
  2. 2. Add the wine and bring to a boil, scraping up any browned bits from the bottom of the pot. Add the beef broth, thyme, and bay leaf. Bring to a simmer and cook for another 20 minutes.
  3. 3. Preheat the broiler. Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls. Top each with a slice of toasted baguette and a generous amount of grated Gruyère cheese.
  4. 4. Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 3-5 minutes. Serve hot.
