- 6 cups Fresh tomatoes, chopped
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 2 cups Vegetable broth
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ¼ cup Fresh basil, chopped
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and garlic, sauté until softened.
3. Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Use a blender to puree the soup until smooth.
5. Season with salt and pepper. Stir in fresh basil before serving.
