Indian Aloo Baingan Sabzi Recipe
A simple and delicious Indian dish made with potatoes and eggplants.

Main Ingredients
- 2 medium Potatoes peeled and diced
- 2 medium Eggplants diced
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 1 inch Ginger grated
- 2 tablespoon Oil
- 1 teaspoon Cumin Seeds
- 1 teaspoon Turmeric Powder
- 1 teaspoon Coriander Powder
- 1 teaspoon Red Chili Powder
- to taste Salt
- 2 tablespoon Cilantro chopped, for garnish
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions, garlic, and ginger. Sauté until golden brown.
Add turmeric, coriander, and red chili powder. Stir well.
Add diced potatoes and eggplants. Mix well to coat with spices.
Cover and cook on low heat until vegetables are tender, about 20 minutes.
Garnish with chopped cilantro and serve hot.
