Indian Ash Gourd Curry Recipe (Olan)

- 500 grams Ash Gourd peeled and cubed
- 1 cup Coconut Milk
- 2 pieces Green Chilies slit
- 1 teaspoon Cumin Seeds
- 1 tablespoon Coconut Oil
- to taste Salt
Heat coconut oil in a saucepan over medium heat.
Add cumin seeds and let them splutter.
Add the cubed ash gourd and green chilies. Sauté for a few minutes.
Pour in the coconut milk and add salt to taste. Mix well.
Cover and cook on low heat until the ash gourd is tender, about 20-25 minutes.
Serve hot with rice or roti.
