Ingredients 

Vegetables

  • 1 cup Carrots cut into sticks
  • 1 cup Green Beans cut into sticks
  • 1 cup Potatoes cut into sticks
  • 1 cup Yam cut into sticks
  • 1 cup Coconut grated
  • 2 pieces Green Chilies slit
  • 1 teaspoon Cumin Seeds
  • 1 cup Yogurt beaten
  • 1 teaspoon Turmeric Powder
  • to taste Salt
  • 2 tablespoon Coconut Oil
  • 1 sprig Curry Leaves

Instructions 

  1. 1. Cook the vegetables with turmeric powder and salt in a large pot until tender.
  2. 2. Grind the grated coconut, green chilies, and cumin seeds into a coarse paste using a blender.
  3. 3. Add the coconut paste to the cooked vegetables and mix well.
  4. 4. Stir in the beaten yogurt and cook for a few more minutes on low heat.
  5. 5. Drizzle with coconut oil and garnish with curry leaves before serving.
