Indian Avial Recipe
Avial is a traditional South Indian dish made with mixed vegetables, coconut, and yogurt. It's a staple in Kerala cuisine.

Vegetables
- 1 cup Carrots cut into sticks
- 1 cup Green Beans cut into sticks
- 1 cup Potatoes cut into sticks
- 1 cup Yam cut into sticks
- 1 cup Coconut grated
- 2 pieces Green Chilies slit
- 1 teaspoon Cumin Seeds
- 1 cup Yogurt beaten
- 1 teaspoon Turmeric Powder
- to taste Salt
- 2 tablespoon Coconut Oil
- 1 sprig Curry Leaves
1. Cook the vegetables with turmeric powder and salt in a large pot until tender.
2. Grind the grated coconut, green chilies, and cumin seeds into a coarse paste using a blender.
3. Add the coconut paste to the cooked vegetables and mix well.
4. Stir in the beaten yogurt and cook for a few more minutes on low heat.
5. Drizzle with coconut oil and garnish with curry leaves before serving.
