- 2 large Eggplants sliced into rounds
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- to taste Salt
- 2 tablespoon Mustard Oil
1. Slice the eggplants into ¼ inch thick rounds.
2. Sprinkle turmeric, red chili powder, and salt on both sides of the eggplant slices.
3. Heat mustard oil in a frying pan over medium heat.
4. Fry the eggplant slices until golden brown and crispy on both sides.
5. Serve hot as a side dish or main course.
