Main Ingredients
- 2 large Eggplants Roasted
- 2 tablespoon Oil
- 1 large Onion Chopped
- 2 medium Tomatoes Chopped
- 4 cloves Garlic Minced
- 1 inch Ginger Grated
- 1 teaspoon Cumin Seeds
- 1 teaspoon Coriander Powder
- ½ teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- to taste Salt
- 2 tablespoon Cilantro Chopped
Roast the eggplants over an open flame until the skin is charred and the flesh is soft.
Let the eggplants cool, then peel off the charred skin and mash the flesh.
Heat oil in a pan, add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add minced garlic, grated ginger, and chopped tomatoes. Cook until tomatoes are soft.
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Add the mashed eggplant and cook for another 10 minutes, stirring occasionally.
Garnish with chopped cilantro and serve hot.
