Indian Baingan Masala Recipe
A delicious and easy-to-make Indian eggplant dish.

Main Ingredients
- 2 large eggplants (baingan)
- 2 tablespoon oil
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 0.5 teaspoon turmeric powder
- 0.5 teaspoon red chili powder
- 0.5 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Wash and cut the eggplants into cubes.
Heat oil in a pan, add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies, sauté for a minute.
Add chopped tomatoes and cook until they soften.
Add turmeric, coriander, red chili powder, and salt. Mix well.
Add the eggplant cubes, mix, and cover the pan. Cook on low heat until the eggplants are tender.
Sprinkle garam masala and mix well.
Garnish with fresh coriander leaves and serve hot.
