Indian Chana Dal with Lauki

Main Ingredients
- 1 cup Chana Dal soaked for 1 hour
- 1 medium Lauki (Bottle Gourd) peeled and chopped
- 1 large Tomato chopped
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 1 teaspoon Turmeric Powder
- 1 teaspoon Cumin Seeds
- 1 teaspoon Coriander Powder
- 1 teaspoon Garam Masala
- 2 tablespoon Oil
- to taste Salt
- 2 cups Water
1. Heat oil in a pressure cooker. Add cumin seeds and let them splutter.
2. Add chopped onions, garlic, and ginger. Sauté until onions are golden brown.
3. Add chopped tomatoes and cook until they soften.
4. Add turmeric powder, coriander powder, and salt. Mix well.
5. Add soaked chana dal and chopped lauki. Stir to combine.
6. Pour in water. Close the lid and pressure cook for 3-4 whistles.
7. Once the pressure releases, open the lid and add garam masala. Mix well.
8. Serve hot with rice or roti.
