Main Ingredients
- 2 cups Chickpeas cooked
- 4 cups Spinach fresh
- 1 tablespoon Olive Oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Ginger grated
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 1 teaspoon Garam Masala
- 1 cup Tomatoes diced
- 1 cup Coconut Milk
- to taste Salt
- to taste Black Pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Add the minced garlic and grated ginger, and cook for another minute.
Stir in the cumin, turmeric, and garam masala, and cook for another minute.
Add the diced tomatoes and cook until they soften.
Add the cooked chickpeas and fresh spinach. Cook until the spinach wilts.
Pour in the coconut milk and bring to a simmer. Cook for 10-15 minutes.
Season with salt and black pepper to taste. Serve hot.
