  • 4 medium Potatoes peeled and cubed
  • 1 tablespoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Fennel Seeds
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Salt or to taste
  • 1 sprig Curry Leaves

Instructions 

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds, cumin seeds, and fennel seeds. Let them splutter.
  3. Add curry leaves and sauté for a few seconds.
  4. Add the cubed potatoes and stir well.
  5. Add turmeric powder, red chili powder, and salt. Mix well to coat the potatoes with the spices.
  6. Cook the potatoes on medium heat, stirring occasionally, until they are crispy and cooked through.
  7. Serve hot as a side dish.
