Indian Coconut Vegetarian Curry
A delicious and creamy vegetarian curry made with coconut milk and a blend of Indian spices.

Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 2 teaspoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 can Coconut Milk
- 2 cups Mixed Vegetables (carrots, peas, bell peppers)
- 1 teaspoon Salt to taste
- ¼ cup Fresh Cilantro, chopped
Heat the oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and grated ginger, cook for another minute.
Stir in the curry powder, ground cumin, and ground coriander.
Add the coconut milk and bring to a simmer.
Add the mixed vegetables and cook until tender, about 15 minutes.
Season with salt to taste.
Garnish with fresh cilantro before serving.
