Indian Curried Barley Pilaf Recipe

Main Ingredients
- 1 cup barley
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 cups vegetable broth
- 1 cup frozen peas
- 1 tablespoon cilantro, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Add the minced garlic and ginger, and cook for another minute.
Stir in the cumin seeds, turmeric powder, and garam masala.
Add the barley and stir to coat with the spices.
Pour in the vegetable broth and bring to a boil.
Reduce the heat to low, cover, and simmer for 45 minutes or until the barley is tender.
Stir in the frozen peas and cook for another 5 minutes.
Garnish with chopped cilantro before serving.
