- 8 pieces Chicken Thighs skinless, boneless
- 1 cup Yogurt plain
- 2 tablespoon Curry Powder
- 1 teaspoon Salt
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Turmeric
- 1 teaspoon Garam Masala
- 2 tablespoon Vegetable Oil
- 1 large Onion finely chopped
- 3 cloves Garlic minced
- 1 inch Ginger grated
- 1 cup Tomato Puree
- 1 cup Chicken Broth
- 1 cup Coconut Milk
- 1 bunch Cilantro chopped, for garnish
1. In a mixing bowl, combine yogurt, curry powder, salt, cumin, coriander, turmeric, and garam masala. Add chicken thighs and coat well. Marinate for at least 30 minutes.
2. Heat vegetable oil in a large skillet over medium heat. Add onions and cook until golden brown.
3. Add garlic and ginger, cook for another minute.
4. Add marinated chicken thighs to the skillet. Cook until browned on all sides.
5. Stir in tomato puree, chicken broth, and coconut milk. Bring to a simmer and cook for 30 minutes or until chicken is cooked through.
6. Garnish with chopped cilantro before serving.
