Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 2 cups Broccoli florets chopped
  • 1 cup Edamame shelled
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Curry powder
  • 2 cups Vegetable broth
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Heat olive oil in a frying pan over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. 2. Add curry powder to the pan and cook for another minute.
  3. 3. Add broccoli florets and edamame to the pan, and sauté for 5-7 minutes until tender.
  4. 4. In a separate saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  5. 5. Combine the cooked couscous with the vegetable mixture. Season with salt and black pepper to taste. Serve warm.
