Indian Drumstick Leaves Poriyal
A traditional South Indian stir-fry made with drumstick leaves, coconut, and simple spices.

Main Ingredients
- 2 cups Drumstick leaves washed and chopped
- 1 tablespoon Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Urad dal
- 2 Dry red chilies broken
- 1 pinch Asafoetida
- 1 cup Grated coconut
- to taste Salt
Heat oil in a pan. Add mustard seeds and let them splutter.
Add urad dal, dry red chilies, and asafoetida. Sauté for a minute.
Add the drumstick leaves and sauté for 5-7 minutes until they wilt.
Add grated coconut and salt. Mix well and cook for another 2-3 minutes.
Serve hot as a side dish.
