Indian Hot Curried Mangos with Tofu Recipe

Main Ingredients
- 2 cups Mangos, diced
- 1 block Tofu, firm cut into cubes
- 1 tablespoon Curry powder
- 1 teaspoon Chili powder
- 1 teaspoon Turmeric
- 1 tablespoon Olive oil
- 1 cup Coconut milk
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 1 tablespoon Fresh cilantro chopped, for garnish
Heat the olive oil in a pan over medium heat.
Add the tofu cubes and cook until golden brown on all sides. Remove and set aside.
In the same pan, add the curry powder, chili powder, and turmeric. Cook for about 1 minute until fragrant.
Add the diced mangos and cook for another 2-3 minutes.
Pour in the coconut milk and bring to a simmer. Add salt and black pepper to taste.
Return the tofu to the pan and cook for another 5 minutes, allowing the flavors to meld.
Garnish with fresh cilantro before serving.
