Ingredients 

Main Ingredients

  • 250 grams Brinjals (Eggplants) chopped
  • 100 grams Moong Dal (Yellow Lentils) washed
  • 1 cup Grated Coconut
  • 2 teaspoons Cumin Seeds
  • 2 teaspoons Turmeric Powder
  • 2 tablespoons Oil
  • to taste Salt
  • 1 Green Chili slit
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • 1 pinch Asafoetida
  • few leaves Curry Leaves

Instructions 

  1. 1. Cook the moong dal in a pressure cooker until soft. Set aside.
  2. 2. In a pan, heat oil and add mustard seeds, urad dal, and asafoetida. Let them splutter.
  3. 3. Add chopped brinjals, green chili, and curry leaves. Sauté for a few minutes.
  4. 4. Add turmeric powder, salt, and a little water. Cook until brinjals are tender.
  5. 5. Grind grated coconut and cumin seeds into a smooth paste. Add this paste to the cooked brinjals.
  6. 6. Add the cooked moong dal to the mixture. Mix well and let it simmer for a few minutes.
  7. 7. Serve hot with rice or chapati.
