Indian Kerala Style Avial Recipe
A traditional Kerala mixed vegetable dish cooked with coconut and yogurt.

Main Ingredients
- 1 cup Carrot cut into sticks
- 1 cup Potato cut into sticks
- 1 cup Green Beans cut into sticks
- 1 cup Yam cut into sticks
- 1 cup Coconut grated
- 2 pieces Green Chilies slit
- 1 teaspoon Cumin Seeds
- 1 cup Yogurt beaten
- 1 tablespoon Coconut Oil
- 1 sprig Curry Leaves
- to taste Salt
Cook the vegetables with a little water and salt until tender.
Grind coconut, green chilies, and cumin seeds to a coarse paste.
Add the coconut paste to the cooked vegetables and mix well.
Stir in the beaten yogurt and cook for a few more minutes.
Drizzle coconut oil and add curry leaves. Mix well and remove from heat.
