Instructions
Heat oil in a pan.
Add mustard seeds and cumin seeds. Let them splutter.
Add turmeric powder and cubed eggplant. Cook for 5-7 minutes.
Add tamarind paste, jaggery, and salt. Mix well.
Cook until eggplant is tender and the flavors are well combined.
Garnish with chopped coriander leaves and serve hot.
