Ingredients 

Main Ingredients

  • 500 g Eggplant cut into cubes
  • 2 tablespoon Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 2 tablespoon Tamarind paste
  • 1 tablespoon Jaggery grated
  • 1 teaspoon Salt to taste
  • 2 tablespoon Coriander leaves chopped

Instructions 

  1. Heat oil in a pan.
  2. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add turmeric powder and cubed eggplant. Cook for 5-7 minutes.
  4. Add tamarind paste, jaggery, and salt. Mix well.
  5. Cook until eggplant is tender and the flavors are well combined.
  6. Garnish with chopped coriander leaves and serve hot.
