Indian Lentil Stew

Main Ingredients
- 1 cup Red Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 inch Ginger grated
- 2 cups Vegetable Broth
- 1 cup Coconut Milk
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 teaspoon Garam Masala
- 1 teaspoon Salt or to taste
- 2 tablespoon Olive Oil
- 1 cup Diced Tomatoes canned
- 1 handful Cilantro chopped, for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onions and sauté until translucent.
Add minced garlic and grated ginger, cook for another minute.
Add turmeric, cumin, coriander, and garam masala. Stir well.
Add diced tomatoes and cook for 5 minutes.
Add rinsed lentils, vegetable broth, and coconut milk. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Season with salt to taste.
Garnish with chopped cilantro before serving.
