Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Chopped Onions
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 cup Chopped Tomatoes
  • 2 cups Mixed Vegetables (carrots, beans, peas, potatoes)
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper
  • 2 tablespoon Chopped Cilantro

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until onions are translucent.
  3. Add tomatoes and cook until soft.
  4. Add mixed vegetables, turmeric, coriander, and cumin. Stir well.
  5. Pour in coconut milk and bring to a simmer. Cook until vegetables are tender.
  6. Season with salt and pepper. Garnish with cilantro before serving.
