Indian Navratan Korma
A rich and creamy curry made with nine different vegetables, nuts, and paneer.

Main Ingredients
- 1 cup Mixed Vegetables (carrot, beans, peas, cauliflower) chopped
- ½ cup Paneer cubed
- ¼ cup Cashew Nuts
- ¼ cup Raisins
- 1 cup Tomato Puree
- ½ cup Heavy Cream
- 2 tablespoon Ghee
- 1 teaspoon Garam Masala
- 1 teaspoon Cumin Seeds
- 1 teaspoon Coriander Powder
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Salt to taste
- 1 cup Water
Heat ghee in a large pan. Add cumin seeds and let them splutter.
Add chopped mixed vegetables and sauté for 5-7 minutes.
Add tomato puree, turmeric powder, coriander powder, red chili powder, and salt. Cook for another 5 minutes.
Add water and bring to a boil. Reduce heat and simmer until vegetables are tender.
Add paneer, cashew nuts, and raisins. Cook for 5 more minutes.
Stir in heavy cream and garam masala. Cook for another 2-3 minutes.
Garnish with fresh coriander leaves and serve hot.
