Indian Peanut Stew

- 2 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 cups sweet potatoes, peeled and cubed
- 1 can diced tomatoes 14 oz can
- 1 cup vegetable broth
- ½ cup creamy peanut butter
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon turmeric
- ¼ teaspoon cayenne pepper
- to taste salt and pepper
- 1 cup spinach, chopped
- ¼ cup cilantro, chopped for garnish
Heat oil in a large pot over medium heat. Add onions and cook until softened.
Add garlic and ginger, cook for another minute.
Add sweet potatoes, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in peanut butter, cumin, coriander, turmeric, and cayenne pepper. Simmer for another 10 minutes.
Season with salt and pepper to taste. Stir in spinach and cook until wilted.
Garnish with chopped cilantro and serve hot.
