Ingredients 

Main Ingredients

  • 1 cup Red Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 can Diced Tomatoes 400g can
  • 1 can Coconut Milk 400ml can
  • 2 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • 1 tablespoon Olive Oil
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, cook for another 2 minutes.
  4. Stir in the curry powder, turmeric, cumin, and coriander, cook for 1 minute.
  5. Add the rinsed red lentils, diced tomatoes, coconut milk, and vegetable broth. Bring to a boil.
  6. Reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.
  7. Season with salt to taste. Garnish with chopped cilantro before serving.
