Indian Rice Pilaf Recipe

Main Ingredients
- 1 cup Basmati Rice rinsed
- 2 tablespoons Ghee
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 1 inch Ginger grated
- 1 cup Mixed Vegetables carrots, peas, beans
- 2 cups Water
- 1 teaspoon Salt to taste
- 1 teaspoon Cumin Seeds
- 1 stick Cinnamon
- 2 pods Cardamom
- 2 pieces Cloves
Heat ghee in a large pot over medium heat.
Add cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté for a minute.
Add chopped onions, garlic, and ginger. Cook until onions are golden brown.
Add mixed vegetables and sauté for 2-3 minutes.
Add rinsed basmati rice and sauté for another 2 minutes.
Pour in water and add salt. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until rice is cooked.
Fluff the rice with a fork and serve hot.
