Ingredients 

Omelette

  • 4 Eggs
  • 1 small Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 2 tablespoon Cilantro, chopped
  • 1 teaspoon Green Chilies, finely chopped
  • to taste Salt
  • 2 tablespoon Oil

Curry

  • 1 cup Coconut Milk
  • 1 small Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 1 teaspoon Ginger-Garlic Paste
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • to taste Salt
  • 2 tablespoon Oil

Instructions 

  1. 1. Beat the eggs in a bowl. Add chopped onion, tomato, cilantro, green chilies, and salt. Mix well.
  2. 2. Heat oil in a frying pan. Pour the egg mixture and cook until the omelette is done. Set aside.
  3. 3. For the curry, heat oil in a pan. Add chopped onions and sauté until golden brown.
  4. 4. Add ginger-garlic paste and sauté for a minute. Add chopped tomatoes and cook until soft.
  5. 5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. 6. Pour in the coconut milk and bring to a boil. Simmer for 5-10 minutes.
  7. 7. Serve the omelette with the curry poured over it.
