Main Ingredients
- 1 cup Chopped Spinach
- ½ cup Chopped Fenugreek Leaves
- ½ cup Chopped Dill Leaves
- ½ cup Chopped Sorrel Leaves
- ½ cup Chopped Eggplant
- ½ cup Chopped Carrot
- ½ cup Chopped Potato
- ½ cup Chopped Onion
- ½ cup Chana Dal (Split Bengal Gram) soaked for 30 minutes
- 2 tablespoon Oil
- 1 teaspoon Cumin Seeds
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Salt or to taste
- 2 cups Water
Heat oil in a pressure cooker. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add turmeric powder, red chili powder, and salt. Mix well.
Add all the chopped vegetables and soaked chana dal. Mix everything together.
Add water and close the pressure cooker lid. Cook for 3-4 whistles.
Once the pressure releases, open the lid and mash the vegetables slightly.
Serve hot with rice or roti.
