Ingredients 

Main Ingredients

  • 2 large Eggplants cut into cubes
  • 2 tablespoon Oil
  • 1 cup Onions finely chopped
  • 1 cup Tomatoes pureed
  • 1 teaspoon Ginger-Garlic Paste
  • 1 cup Yogurt whisked
  • 1 teaspoon Garam Masala
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Red Chili Powder
  • to taste Salt
  • 2 tablespoon Fresh Cream
  • 2 tablespoon Cilantro chopped, for garnish

Instructions 

  1. Heat oil in a pan and fry the eggplant cubes until golden brown. Remove and set aside.
  2. In the same pan, add onions and sauté until golden brown. Add ginger-garlic paste and cook for another minute.
  3. Add tomato puree and cook until the oil separates. Add all the spices and mix well.
  4. Lower the heat and add whisked yogurt. Stir continuously to avoid curdling.
  5. Add the fried eggplant cubes and mix well. Cook for another 5-7 minutes.
  6. Finish with fresh cream and garnish with chopped cilantro. Serve hot.
