Main Ingredients
- 1 whole chicken about 3-4 pounds
- 2 tablespoon olive oil
- 1 tablespoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper freshly ground
- 4 cloves garlic minced
- 1 inch ginger grated
- 1 lemon lemon juice freshly squeezed
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine olive oil, garam masala, turmeric, cumin, coriander, salt, pepper, garlic, ginger, and lemon juice.
Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
Place the chicken in a roasting pan and roast in the preheated oven for about 60 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving. Serve warm.
