Indian Spinach and Mushroom Curry

Main Ingredients
- 2 tablespoon Oil
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 inch Ginger, minced
- 200 g Mushrooms, sliced
- 300 g Spinach, chopped
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 1 teaspoon Garam masala
- 1 cup Tomato puree
- 1 cup Coconut milk
- to taste Salt
Heat oil in a large pan over medium heat.
Add chopped onions and sauté until golden brown.
Add minced garlic and ginger, cook for another minute.
Add sliced mushrooms and cook until they release their water.
Add chopped spinach and cook until wilted.
Stir in turmeric, cumin, coriander, and garam masala. Cook for a minute.
Add tomato puree and coconut milk. Mix well and bring to a simmer.
Season with salt to taste. Simmer for 10-15 minutes.
Serve hot with rice or naan.
