Indian Stuffed Baingan Recipe

Main Ingredients
- 8 small Eggplants small and tender
- 2 tablespoon Oil
- 1 cup Onion finely chopped
- 2 teaspoon Ginger-Garlic Paste
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 2 teaspoon Coriander Powder
- 1 teaspoon Garam Masala
- to taste Salt
- 2 tablespoon Cilantro chopped
1. Wash and slit the eggplants without cutting them fully.
2. Heat oil in a pan and sauté onions until golden brown.
3. Add ginger-garlic paste and sauté for another minute.
4. Add turmeric, red chili powder, coriander powder, garam masala, and salt. Mix well.
5. Stuff the eggplants with the mixture and cook on low heat until tender.
6. Garnish with chopped cilantro and serve hot.
