Ingredients 

Main Ingredients

  • 500 g Pumpkin, peeled and cubed
  • 1 tablespoon Vegetable oil
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 cup Coconut milk
  • 1 cup Water
  • to taste Salt
  • to taste Fresh cilantro, chopped for garnish

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Add garlic and ginger, cook for another minute.
  4. Stir in turmeric, cumin, and coriander powders.
  5. Add the cubed pumpkin and mix well to coat with spices.
  6. Pour in coconut milk and water, bring to a boil.
  7. Reduce heat and simmer until pumpkin is tender, about 20 minutes.
  8. Season with salt to taste.
  9. Garnish with fresh cilantro before serving.
