Indian Suran Ki Sabzi Recipe (Yam Curry)

- 500 grams Yam (Suran) peeled and cubed
- 2 tablespoons Oil
- 1 teaspoon Cumin Seeds
- 1 cup Onion finely chopped
- 2 teaspoons Ginger-Garlic Paste
- 2 cups Tomato Puree
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Coriander Powder
- 1 teaspoon Garam Masala
- to taste Salt
- 2 tablespoons Cilantro chopped, for garnish
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for another minute.
Add tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
Add the cubed yam and mix well. Add a little water if needed. Cover and cook until the yam is tender.
Once the yam is cooked, add garam masala and mix well. Cook for another 2-3 minutes.
Garnish with chopped cilantro and serve hot with rice or roti.
