Ingredients 

Main Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook until softened.
  2. Add the curry powder, cumin, and turmeric. Stir well to combine.
  3. Add the sweet potatoes, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the sweet potatoes and lentils are tender.
  4. Use a blender to puree the soup until smooth. Return to the pot and stir in the coconut milk. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh cilantro if desired.
