Indian Tomato Gojju

Main Ingredients
- 4 cups Tomatoes, chopped
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
- 2 tablespoon Oil
- 1 teaspoon Turmeric powder
- 2 teaspoon Red chili powder
- 1 teaspoon Salt to taste
- 1 tablespoon Jaggery optional
- 1 cup Water
- 2 tablespoon Coriander leaves, chopped for garnish
Heat oil in a pan. Add mustard seeds and let them splutter.
Add cumin seeds and sauté for a few seconds.
Add chopped tomatoes and cook until they turn soft.
Add turmeric powder, red chili powder, and salt. Mix well.
Add water and jaggery (if using). Let it simmer for 10-15 minutes.
Garnish with chopped coriander leaves and serve hot.
