Ingredients 

Main Ingredients

  • 1 cup Potatoes, diced
  • 1 cup Sweet Potatoes, diced
  • 1 cup Eggplant, diced
  • 1 cup Green Beans, chopped
  • 1 cup Green Peas
  • 1 cup Fenugreek Leaves
  • 2 tablespoon Oil
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • to taste Salt

Instructions 

  1. 1. Heat oil in a pressure cooker.
  2. 2. Add turmeric, red chili powder, coriander powder, and cumin powder. Sauté for a minute.
  3. 3. Add all the vegetables and mix well.
  4. 4. Add salt to taste and mix again.
  5. 5. Add a little water, cover the pressure cooker, and cook for 3-4 whistles.
  6. 6. Once the pressure releases, open the cooker and gently mix the vegetables.
  7. 7. Serve hot with puris or rotis.
