Indian Vada Curry Recipe

Ingredients 

For the Vada

  • 1 cup Chana Dal soaked for 2 hours
  • 2 Green Chilies chopped
  • 1 teaspoon Cumin Seeds
  • 1 pinch Asafoetida
  • to taste Salt

For the Curry

  • 2 tablespoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 Onion finely chopped
  • 2 Tomatoes pureed
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 cup Coconut Milk
  • to taste Salt
  • 2 tablespoon Coriander Leaves chopped

Instructions 

  1. 1. Drain the soaked chana dal and grind it coarsely with green chilies, cumin seeds, asafoetida, and salt. Do not add water.
  2. 2. Heat oil in a frying pan and drop small portions of the dal mixture to form vadas. Fry until golden brown. Set aside.
  3. 3. In a cooking pot, heat oil and add mustard seeds and cumin seeds. Let them splutter.
  4. 4. Add chopped onions and sauté until golden brown. Add tomato puree, turmeric powder, and red chili powder. Cook until the oil separates.
  5. 5. Add coconut milk and bring it to a boil. Add salt to taste.
  6. 6. Add the fried vadas to the curry and simmer for 10 minutes. Garnish with chopped coriander leaves.
