Indian Val Papdi Nu Shaak Recipe
A traditional Gujarati dish made with Val Papdi (Indian broad beans) cooked with spices.

Main Ingredients
- 250 g Val Papdi (Indian broad beans) trimmed and cut into pieces
- 2 tablespoon Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
- 1 pinch Asafoetida (Hing)
- 1 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 teaspoon Coriander powder
- 1 teaspoon Garam masala
- to taste Salt
- 1 cup Water
Heat oil in a pan. Add mustard seeds and let them splutter.
Add cumin seeds and asafoetida. Sauté for a few seconds.
Add the trimmed Val Papdi and stir well.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
Add water, cover, and cook on low heat until the Val Papdi is tender.
Sprinkle garam masala and mix well. Cook for another 2-3 minutes.
Serve hot with roti or rice.
