Ingredients 

Main Ingredients

  • 1 cup Rice
  • ½ cup Yellow Moong Dal (split yellow lentils)
  • 1 cup Mixed Vegetables (carrots, peas, beans, potatoes) chopped
  • 1 medium Onion chopped
  • 1 medium Tomato chopped
  • 1 teaspoon Ginger-Garlic Paste
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Seeds
  • 2 tablespoon Ghee or Oil
  • 4 cups Water
  • to taste Salt
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. Rinse the rice and moong dal together under running water until the water runs clear. Drain and set aside.
  2. Heat ghee or oil in a pressure cooker over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder and mix well.
  7. Add the mixed vegetables and sauté for a couple of minutes.
  8. Add the rinsed rice and moong dal to the cooker. Mix everything well.
  9. Add water and salt to taste. Stir well.
  10. Close the lid of the pressure cooker and cook on medium heat for 3-4 whistles.
  11. Once the pressure releases naturally, open the lid and give the khichdi a good stir.
  12. Garnish with chopped cilantro and serve hot.
