Instructions
Heat oil in a large pot over medium heat.
Add chopped onions and sauté until golden brown.
Add minced garlic and ginger, cook for another 2 minutes.
Stir in tomato puree and cook for 5 minutes.
Add mixed vegetables, coconut milk, and all the spices. Stir well.
Cover and cook for 20 minutes or until vegetables are tender.
Garnish with chopped cilantro and serve hot.
