Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 cup Tomato Puree
  • 1 cup Mixed Vegetables (carrots, peas, potatoes), chopped
  • 1 cup Coconut Milk
  • 1 teaspoon Garam Masala
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • to taste Salt
  • to taste Cilantro, chopped

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic and ginger, cook for another 2 minutes.
  4. Stir in tomato puree and cook for 5 minutes.
  5. Add mixed vegetables, coconut milk, and all the spices. Stir well.
  6. Cover and cook for 20 minutes or until vegetables are tender.
  7. Garnish with chopped cilantro and serve hot.
